follow friday - cupcakes and cashmere

With a blog name like "Cupcakes and Cashmere" how could this blog be anything less than fabulous?

I stumbled upon this blog a couple of days ago and I've spent hours perusing all the posts.  This blog is basically exactly what I want my life to be: simple chic. 

I love the "How To" posts, and because of them I will be making this Delicate Ombre Necklace and I definitely want to shuck my own oysters.  I always feel like I'm the only person who likes oysters so nobody wants to eat them with me, so why don't I just make my own?!

Don't even get me started on the recipes that Emily's created and collected.  The following have all been added to my "to make" list:

tofu tuesday

One of the things that I hate THE MOST about being a gown up is figuring out what to have for dinner.  Don't get me wrong, I love cooking and find it fun (for the most part), however, trying to decide what we're going to eat every week drives me bonkers.

We meal plan and grocery shop once a week, usually Sundays.  So Sunday morning/early afternoon usually consists of us sitting down and deciding on our meals for the week and writing out a grocery list.  Ugh.  What should be a five or ten minute chore turns into a hour long conversation of "what should we have for dinner", which always gets the response of "I don't know" or "homemade macaroni and cheese".  Sorry Hubby, I'm not feeding us macaroni and cheese once a week.  It's never going to happen.



What we really should do is make a list of dinner ideas and then just consult the list every week and pick out what we want to eat and shop for.  But that just makes too much sense.  Why would we make things easier on ourselves?

This dinner, however, is one that I made up and tried out a little while ago, and Hubby really enjoyed.  So it's now one of our staple "go to" dinners.  Not to mention, the fact that I can get Hubby to eat tofu and acutally enjoy it just blows my mind. 

TOFU NOODLE STIR FRY

This is a great weeknight dinner as it leaves you with a lot of leftovers, but not so much that you'll have to eat it for the rest of the week.  It makes enough for Hubby and I to each have a bowl for dinner (and for Hubby to have seconds) and for both of us to take it for lunch the next day.

2 handfuls of frozen shelled edamame beans
1 package extra-firm tofu
1 teaspoon sesame oil
1/4 cup soya sauce
About 2 cups of carrots and broccoli stems, julienned (I just used a half package of broccoli slaw that I bought at Superstore - basically just add in any veggies you want)
Vermicelli noodles (about 1/2 package)

Start by cutting the tofu into chunks. Not too small, not too big. Heat the sesame oil in a large frying pan (or wok) over medium heat. Add the tofu and cook until golden on all sides.

Once golden, remove the tofu from the frying pan and set aside. Add the broccoli and carrots to the frying pan with the soya sauce. Cook for a couple minutes and then add in the edamame (no need to thaw first). Cook for another couple minutes, or until the vegetables are tender.

While you're waiting for your veggies to get nice and tender, cook the vermicelli according to the package directions (the ones I use just need to sit in a bowl of boiling hot water for a minute or two).

Add the noodles (make sure to drain all the water first) and the cooked tofu to the vegetables. Give everything a good toss to mix everything together.  Feel free to add a tad more sesame oil and/or soya sauce, as needed.  I also like to give a generous grind of pepper and maybe a little garlic powder.  Whatever you're in the mood for.

Serve warm, but is also great eaten cold at your desk the next day while you're working through your lunch.

Hubby and I miss Europe. We want to go back, like, right now. Almost every day one of us will say "I miss Europe, let's go back tomorrow". Sigh. If it were only that easy.

As I eluded to in yesterday's post, this past Tuesday evening consisted of Hubby and I being glued to the television.  After a long campaign, we were anxious to find out who would be elected (or re-elected) as the President of the United States.



After some these moments (thanks, swing states), it was finally evident that Barack Obama had been re-elected.  Thank.  Goodness.

I'm not much of a meat eater.  I'm not a vegetarian, by any means, but most of the time I'll gravitate towards vegetarian for seafood dishes when given the choice.  I call myself a flexitarian.

However, I'm married to the biggest carnivore around.  Hubby believes in "the more meat the better".


Luckily for me, Hubby is extremely easy going when it comes to what I make.  I think he's just grateful that he's not the one who has to do most of the cooking.  Since I'm in charge of the kitchen, I feed my poor meat-loving man many vegetarian meals.  Poor, poor man.

This past week I reached a milestone.  As of last Friday, I achieved a major weight loss/healthy living goal.

I lost almost 20 lbs - over my goal of 10% of my total starting weight that I had set for myself back in March.

Sure, it's not rapid weight loss by any means (at an average of 2.85 lbs per month), but it's not so much about losing weight as much as it is about changing my lifestyle habits.  I feel better.  My BMI is 1/2 a point shy of the "normal" category, and I know that I'm already reaping health benefits that I'm not even noticing.

vanilla bean creme brulee

This past week was one of the most stressful weeks of my life.  Here's a recap:

Last Sunday evening we put an offer in on a new condo, which was accepted.

On Monday we officially sold our condo.

All week we worked furiously (on top of our already busy full-time jobs) to secure financing, arrange inspections, and read stacks upon stacks of documents for our new condo.

On Friday we had confirmation that we were 100% buying the new condo.

With all this craziness going on, Hubby and I were also hosting a dinner for some of our close friends on Saturday night.  Dessert is always my downfall.  I'm more comfortable cooking than I am baking.  I like to freestyle my measurements, rather than measure them out perfectly.  Dessert and I are not always friends.  I had originally thought of making meringues with fruit for dessert, but those thoughts were squashed when my mom bought me a cookbook called "Creme Brulee".  I admit that I was a little extremely intimidated by the thought of making creme brulee from scratch.  But after the week that I had just conquered, I felt like I could tackle anything.  And I did.

I don't know what it is about Sundays, but it seems that all I want to do is sleep in, curl up with a good book, and cuddle my kitties.  The only things that I actually feel like doing is cooking; making a comforting dinner for Hubby and I.



It took me a while to figure out want I wanted to eat tonight.  Naturally, I gravitate towards pasta.  Shocker.  I love this pasta because it's creamy, yet amazingly simple to make.  Plus, it's got bacon in it.  What's better than bacon?  Nothing.

[Today, instead of a supper, you get a snack!  Why?  Well, tonight I'm not cooking supper, instead, I'll be at BC Place cheering on the BC Lions as they fight for their spot in the Grey Cup!  Go Lions Go!]

I have a new snacking obesession.   Potato chips.  Okay, okay, I know that potato chips are not going to help me achieve my goal.  So I found a way to enjoy them, without making my waistline larger.

I've got major German brain right now.  Not only am I currently taking German lessons, but I'm also researching and planning our trip to Germany next year.  In my brain it's Germany, all day long.

No surprise that with all this German thinking, comes a craving for German food.

peach raspberry pie

What do you get when your husband leaves you for the weekend and fresh summer fruit?  Peach raspberry pie.  At least that's what I got this past weekend.

Hubby was working on the Island all weekend, and I decided that I'd spend my weekend cleaning, Jazzercise-ing, and making pie.  Oh, and re-watching Season 4 of Mad Men and my PVR'd episodes of History Detectives.  Have you ever watched History Detectives?  It's pretty much the best show ever, but then again, I also love Antiques Roadshow, so my opinion might not count for much.

grilled salmon & asparagus

One of my most favourite parts about summer is definitely getting together with family and/or friends for a BBQ.  I love the smell of charcoal in the air, being surround by the ones I love, and listening to everybody enjoying themselves in the warm summer air.

There are two things that I love grilled more than anything:  salmon and asparagus.

A couple of years ago Hubby made some BBQ salmon that was ah-mazing and I've been a little obsessed with it ever since.  The mixture of the soy sauce and the brown sugar give the salmon a sweet/salty coating, and iinside stays juicy and moist - purrfection (meow)!

potato pancakes

I'm stressed. Like, beyond stressed. I have so much on my plate right now that I don't know how to handle it. Normally, I thrive when put in stressful situations, but lately, I feel like I'm crumbling.

Work is crazy, school deadlines are freaking me out, and tonight it's do or die for the Canucks to win the Stanley Cup.

When I got home from work yesterday, I just needed to feel better. I needed comfort. So, I made comfort food. Bland-ish German comfort food. Potato Pancakes (also known as latkes). I don't know why, but for me, potato pancakes are basically my food security blanket. They are quick and easy to make and completely unhealthy when served with bacon and sour cream instead of vegetables. Which I did. And it was delicious.

keen on quinoa

Do you ever eat quinoa?  Do you know what quiona is?  If not, let wikipedia me enlighten you:

Quinoa (keen-wah) is a grain-like crop grown primarily for its edible seeds.  It is a "pseudocereal" rather than a true cereal, or grain, as it is not a member of the grass family.  Quinoa is closely related to species such as beets, spinach, and tumbleweeds.  It's light with a fluffy texture when cooked, and its mild, slightly nutty flavor makes it a delicious choice.  Also, quinoa is super good for you.  It's a super food, yo.  Eat it, enjoy it.

I love long weekends, don't you?  I love having that "extra" day to not set the alarm, hang out with family and friends, and make/eat delicious food.

This past long weekend, Hubby spent his time in the bush.  With the military.  And hundreds of children.  Not my idea of a good time, that's for sure, but he had a lot of fun, and if he's happy, I'm happy.

The only part he doesn't like?  Eating his meals out of a bag for five days.

cinnamon sugar sunday

Today marked a very momentous occasion:  I christened my rolling pin.

I received the rolling pin last Christmas from my Mom and Dad.  I've been wanting to use it ever since, but I felt that I needed to make something epic for it's first use.  Something that is worthy of the virgin rolling pin.  Then, earlier this week I found it.  The perfect recipe.  Cinnamon Sugar Pull-Apart Bread.  Done.

This bread is all kinds of ridiculous.  I don't think I could have picked a better recipe for the rolling pin's inaugural run.  Even if you're a baking novice, like me, I hope you will make this.  It's delicious. Seriously, cinnamon sugar dough, how can it be anything less that heavenly?

roasted garlic hummus

What a great weekend! The weather was BEAUTIFUL here in Vancouver, I accomplished a lot off of my ever-growing "chore list", the Canucks won, and I made hummus.

Oh yeah, I also went to IKEA with Hubby, and he didn't once ask "are you done yet?".  Seriously, could the weekend have been any better?  No, I don't think so.  Well, maybe if we won the Lotto Max, but, hey, you can't win 'em all.

Hummus is one of my favourite things, especially when made with a whole head of roasted garlic.  That's right, a whole head!
