This past long weekend, Hubby spent his time in the bush. With the military. And hundreds of children. Not my idea of a good time, that's for sure, but he had a lot of fun, and if he's happy, I'm happy.
The only part he doesn't like? Eating his meals out of a bag for five days.
I feel so bad for Hubby when he comes home from military exercises. He's exhausted and in need of a rest. I try to make coming home special for him. He gets a hot shower, clean clothes, and a nice home-made dinner. I'm talking meat and potatoes kind of dinner. You know, man stuff. So, that's exactly what he got yesterday. Meat and potatoes, or, ribs and warm potato salad.
The recipe for the rib sauce is one of our family's favourites. My mom got it from my Grandma, and it's one that gets made all the time (although, usually with pork chops instead of ribs). The inspration for the warm potato salad came from one of our favoutie dishes at a local restaurant. Both are super easy, and oh so tasty!
RIBS
1 cup ketchup
2 garlic cloves, chopped
1 medium onion, chopped
1 tablespoon lemon juice
4 tablespoons worcestershire sauce
hot sauce (as little or as much as you like)
1/2 cup water
salt, to taste
1 rack of ribs
Pre-heat oven to 325F. Stir all ingredients (except the ribs, silly) in a saucepan over medium heat until boiling. While the sauce is heating up, place the rack of ribs into a baking dish. I used my 9x13 pyrex baking dish, but you can pretty much use anything that is big enough to hold the ribs. Once the sauce is boiling, remove from the stovetop and pour over the ribs. Cover baking dish with foil and put in oven for 2.5 to 3 hours. I took my ribs out every half hour and basted them to make sure they were nice and saucy. You don't have to check them this often, but I would check them at least a couple times throughout. You know they're done when the meat is falling off the bone, mmmmm!
WARM POTATO SALAD
6 red potatoes, cubed

4 slices of bacon, fried & crumbled
3 green onions, chopped
1 cup sour cream
2 tablespoons mayonnaise
2 tablespoons worcestershire sauce
2 tablespoons dijon mustard
1 tablespoon lemon juice
salt & pepper
Place potatoes in a large saucepan (with water) and boil until fork tender. While the potatoes are boiling, mix together the rest of the ingredients in a large bowl. Once potatoes are done (tender enough to pierce with a fork, but not falling apart), drain and add to the sauce mixture. Sir a couple times to make sure all the potatoes are coated. Serve immeidately, while still warm, to a hungry and exhausted Hubby.
